Two autumn favorites, apple & fig, go into this cake, but not simultaneously! You’ll prep two different batters with apple pie mix and fig jam. For the cake:
- 1 (15.25 oz) spice cake mix
- 3 eggs
- 1/2 cup fig jam
- 3/4 cup apple pie filling
- 1/2 apple, sliced thin
- 1/2 cup fresh or dried figs, halved
For the filling
- 1 cup sugar or brown sugar
- 1/2 cup buttermilk
- 1/2 cup butter
- 1 tsp baking soda
- 1 tsp vanilla
Directions
- In one large bowl, mix together 2 cups spice mix + 2 eggs + 3/4 cup apple pie mix
- In second medium bowl, mix together: 1 1/4 cup spice cake mix + 1 egg + 1/2 cup fig jam
- Top apple cake with apple slices and fig cake with fresh or dried halved figs.
- Bake in an oven preheated to 350ºF degrees for 18-23 minutes, or until a toothpick inserted in the center of the cake comes out clear
- Mix sugar, buttermilk, and butter and bring to a boil. When the mixture reaches 205-215ºF. Then, remove from heat and add in baking soda and vanilla. Cool to room temperature.
- Once the cake is cooked, serve warm or at room temperature, topped with Buttermilk Sauce.
