- 3 cups butternut squash, peeled, seeded and grated
- 1/2 cup flour
- 1 egg
- 1/4 cup shredded parmesan
- 1-2 Tbsp fresh thyme or sage, minced
- Olive oil or butter for coating the pan
Directions
- In a large bowl, combine grated butternut, flour, egg, parmesan, and fresh minced thyme or sage.
- Lightly coat a GoodCook ProEase fry pan with a thin layer of oil or butter. Heat over medium heat.
- Once the pan is warm, spoon approximately 1/4 cup of butternut mixture.
- Once browned, flip and cook the second side until golden brown, then transfer to a plate.
